Stefano Bellotti explains…

Terroir is a French word of which we do not have the equivalent in Italian. Basically terroir represents a taste linked to a place and a specific plant. It is the case not only for the wine, but for any agricultural product. For the oil in particular: that taste, that flavor, those aromas can only be there in a certain place. It is right that each food product be unique and unrepeatable, as each of us is unique and unrepeatable. The joy of living, the joy of the palate, the joy tasting is due precisely to this uniqueness that also translates into conviviality. This uniqueness can only come from good agriculture and real plants.”

Our terroir

Cascina degli Ulivi is located on the Gavi hills in South Piedmont, nearby Novi Ligure in the province of Alessandria. It is part of the Alto Monferrato territory.

This is historically a place of passage, a region rich in fortresses, fortified buildings and castles, of ancient charming villages and museums. Its hilly landscape is characterized by the cultivation of wine. The Monferrato is in fact one of the most famous Italian wine-growing region in the world.

Stefano explains, “I have become a winemaker because here the land is not particularly rich and generous with agriculture. Indeed it is among the most difficult lands to be cultivated. It is red clays, acid-ferrous, very difficult lands. But it is also very generous in giving quality to the grapes and structure to the wine.

Our 22 hectares of vineyards are spread over different areas. The main places are as follows:

Filagnotti

This vineyard is located near the town of Tassarolo, and it has a wonderful view of the Castello delle Marchesi Spinola. The soil is of red clay, and the exposure to the south-west. Here we grow the Cortese vine for our Filagnotti wine, and other 90-year-old vines for our A Demûa (Timorasso, Verdea, Bosco, Riesling Italico and Chasselas, all planted together).

Montemarino

This vineyard, instead, is located on top of one of the highest hills of Gavi region. The vines grow on limestone-rich clay soils, in full exposure to the south, with sea winds. Here we grow the vines for our various wines: Montemarino, IVAG, Merla Bianca, Nibiô, Mounbè… In Montemarino there is also our winery.

Cascina

Some parcels are also found on the land of the Cascina, near the farm. The soil is red clay based,  and the vineyard is on moderate slopes with a view of our vegetables garden and orchard. The Cortese used in our Semplicemente Vino Bianco is grown here. In Cascina there is also our bottling cellar, where bottles are stored and reserves are aged.
