Works in the vineyards
We apply biodynamic farming on all our vineyards. The vines are vertical trellis trained and the pruning is Guyot, with a density of about 5000 vines per hectare.
Every year, we sow green manure composed of many different species that include Gramineae, Leguminosae, Cruciferae, Poligonaceae.
We neither defoliate nor lop. Green harvest is not necessary because we have a well balanced ripening process.
Pest management treatments are limited to sulphur and copper. Copper is used in quantities that are usually lower than 2 kg per hectare per year and this has proven not to leave residues in the soil as it gets easily metabolised by the soil’s micro-organisms.
We have seen that thanks to good agronomical practices and the use of biodynamic preparations our canopy can absorb higher quantities of CO2. Great quantities of CO2 are also transformed in organic carbon by the mass of our green manure.
We need to use tractors for spraying and soil tillage, but since the amount of them is very limited, our fuel consumption per hectare of vineyard is about half of that of a conventional farm.

Biodynamics is presently the best method for a healthy, living, agriculture able to enrich soils where it is applied, hence guaranteeing sustainability for the future. This way the soil gives tasty and authentically nutricious fruit that truly express its terroir.
Terroir
Cascina degli Ulivi is located on the Gavi hills in South Piedmont and is part of the Alto Monferrato territory. This is historically a place of passage, a region rich in fortresses, fortified buildings and castles. It is also one of the most famous Italian wine regions in the world.

Stefano Bellotti has always strived to produce natural wines, with no additives, using only the grapes from our vineyards, farmed with biodynamic methods.
